DOMAINE
SAINT JEAN WINES
All
the wines of Domaine Saint Jean come from vines grown
in clayey – calcareous soil. During the grape
picking period the bunches are selected on the plant.
All the wines are produced from hand – picked
grapes and placed in small crates containing a maximum
of 35 kg, so they are not squashed. The yield per hectare
is purposely kept low.
There are several wines:

- ADC Cotes de Provence
Red
This wine is all the features of a high quality blended
wine. Syrah, Grenache and the touch of Cabernet –
Sauvignon, a short time in the barrel are factors which
give this wine personality, structure and smoothness.
Rosé
This wine comes from Grenache and has good personality,
structure, a good body and wonderful aftertaste.

- ADC Coteaux Varois
Red
A well – rounded delicate, fruity wine. It goes
with the typical summer dishes of Provence.
Rosé
Flowery, delicate and fine, this rosè is favoured
for its delicacy and aroma.
White
A well – marked presence of grapefruit and pineapple.
This wine comes from Rolle and Clairette grapes and
is harmoniously persistent on the palate.

- Pays du Var Wine
Cabernet Sauvignon
Domaine’s apple of the eye; in the past Cabernet
Sauvignon could not be an ADC Coteaux Varois or Cotes
de Provence wine nor can it be so today. It was decided,
therefore, to abandon the ADC and create a great single
– variety wine, using only Cabernet – Sauvignon.
The yield per hectare is still kept low (from 20 to
35 hl depending on the year), rigorous checks on the
degree of ripeness of the grapes before picking, long
fermentation of the most with the grape skins, 10 to
18 months’ ageing in oak barrels are among the
many factors which go together to make a great wine.
Blanc de Blanc
This wine comes from two well – known grapes Sauvignon
and Chardonnay. Rich in almond and fruit aromas, well
– balanced makes it perfect to be drunk throughout
the year.
L’Exceptionnel
A new wine of Domaine Saint Jean from which it has taken
its name: Exceptionel. The characteristics of Cabernet
and Syrah give this wine a very specific taste and the
slight aroma of vanilla balances it perfectly.
